At many Nigerian weddings, the first question guests ask after finding a seat is not about the couple. It is: “Where are the small chops?” These bite-sized snacks have become an essential part of celebrations, and in Ghana, too, they are a favourite at weddings and parties.
What small chops are
Small chops are finger foods served before or alongside the main meal. A typical platter includes puff-puff, spring rolls, samosas, peppered gizzard or chicken, mini sausage rolls and sometimes fried plantain or yam.
Why they matter
Wedding programmes often run late. Small chops keep guests satisfied during photos, speeches and delays, so hungry guests do not become restless.
Choosing the menu
Mix sweet and savoury items, and offer something for vegetarians. Popular combinations include puff-puff, spring rolls, samosa and peppered meat. Ask the caterer for a tasting.
How much to order
Caterers usually price small chops per pack or per guest. Plan for each guest to receive at least one pack, and order extra for the bridal party, vendors and unexpected guests.
Packs or trays?
Many weddings serve small chops in individual packs or boxes, which are easy to hand out and hygienic. Others use trays carried by waiters. Packs reduce waste and help control portions.
Timing
Serve small chops as guests settle, or during the gap between the ceremony and the reception. Do not serve them so late that guests lose their appetite for the main meal.
Keeping them fresh
Fried foods lose their crispness quickly, and meat must be kept safe in the heat. Ask your caterer how they will fry close to serving time and keep food covered.
Drinks
Pair small chops with chilled drinks: water, soft drinks, zobo or sobolo, and, if you choose, alcoholic options.
For traditional ceremonies
Small chops work well at engagement ceremonies too, where proceedings can last for hours before the main food is served.
Budget tips
If money is tight, reduce the number of items per pack rather than cutting small chops completely. Guests notice empty hands more than a smaller platter.
The first taste of the party
For many guests, the small chops pack is the first sign that a wedding will be well organised. A warm puff-puff at the right time can set the mood for the whole celebration.
